First I want to say….this casserole is ridiculously delicious. It is also 100% baby approved. So far, so good, right? Well…it’s also a pain in the tookus to make. It’s not hard; you’re just going to make a huge mess. Totally worth it, though, in my opinion.
It’s enchiladas without the fuss of frying and rolling them individually. What’s not to love here? Each layer is bursting with yummy, Mexican flavor. Ooooh. It’s so good. The enchilada sauce is super fragrant with Mexican oregano, cumin and coriander seeds. The filling is a hearty, mushroom and potato mixture with lots of onion-ey goodness. (onion-ey is not a word; I know).
I love going to Mexican restaurants, but they rarely have a real vegan entree that is outrageously good….and they are always throwing broccoli and carrots into my burrito. Squash too. Who does that?! I usually do rice and beans and am totally happy with that, but occasionally it would be nice to have something a little different. This casserole is my answer.
The recipe is broken up into 4 parts…yes, really. So you gotta make the potatoes first, then the enchilada sauce, then the filling and then the white sauce. Told you…huge mess. After all of that is complete, you assemble this bad boy…..also quite messy. Bake in the oven for 30 minutes on 350 and you’re done. Now the dishes….
I’m sure this would have taken me less time, had I not been running around after a toddler, so you may have better luck with time management. The end result is worth it, so I’ll make it again for sure.
P.S. I chopped up the mushrooms and onions pretty fine for the filling….it ensured that kids and mushroom-haters alike would enjoy this. They didn’t even know there were in there.

So, the kid verdict: APPROVED! He absolutely loved this. He went at it with vigor! He started out eating with his fork, then totally abandoned civility and started shoving it into his mouth with his little hands. Enchilada everywhere. I’m ok with that.
